It is the same for websites I work on. There is an auto save of any changes made but these are not overwriting what you are actually doing on the site in real time. It allows you to change something, experiement with an idea and if it doesn't work and for some reason the site will not let you "undo" which does happen, you can simply scroll through the saves and call up the one before you made the changes that didn't pan out. It is more a set of snapshots at a particular time.
There is a lot of software that does this. As long as the save is not destructive, overwiritng what you are doing in real time then I cannot see why it is not implemented on keyboards.
